Buti Yoga Healthy Recipes:

Asparagus helps to reduce inflammation in the body. This veggie is super high in essential minerals such as selenium, zinc and manganese which are vital for a strong and healthy immune system. High in vitamins A, K, B-complex and folate, these green stalks don't take much to prepare.

Here's a simple and delicious recipe that you can whip up in no time!

Preheat your oven to 425 F. Then, on a foil lined baking sheet spread out one bunch of washed and trimmed asparagus, drizzle 1 tablespoon of extra virgin olive oil over top and toss them to coat. Season to taste with some sea salt and black pepper and bake for 10-15 minutes until tender.

Once they come out of the oven you can sprinkle with lemon zest and freshly squeezed lemon juice just before serving. It really is the perfect spring side dish! Feel free to add some red pepper flakes if you like things more spicy. Psst...we got my two year old to eat them by telling him they were green French fries! Hey, whatever works right mamas?

Optional: Crush a handful of grain free crackers or breadcrumbs (we love Absolutely Gluten Free crackers) and sprinkle the asparagus with a handful of crushed crumbs before baking.

TIP: Save your asparagus and keep those lovely green stalks fresher longer with this easy trick! Put your asparagus in a shallow bowl, ensuring the stems are covered in about 1-2 inches of cold water and place the bowl in the refrigerator and be sure to change the water every other day. Your asparagus will last twice as long.
